How to make gluten-free bread look like normal bread? Recipes please

The doctor took me out of gluten by pointing it out as responsible for most of the health problems I've been having lately including thyroid malfunction, but getting used to it is my worst nightmare.

I have tried all the preparations that are available for sale in the supermarket, they all make a dry and tasteless bread, without any grace at all.

I have already taken a lot of Internet recipes and none makes bread that looks like bread. Some make bread that is eaten while hot, but after cooling it gets hard like stone.

And the problema is I love bread, I used to make homemade bread in a wood oven, so I miss it so much :8

Is it impossible to feel the pleasure of eating bread with a mixture of gluten-free flours? Does anyone know the perfect recipe?

The one I tried and came closest was 300 gr of oatmeal, 200 gr of rice flour, 100 gr of potato starch, but after cold it is horrible hard as a stone, and the taste of rice does not make me happy to think that I Am Eat bread and my mouth savor rice.

Well this is a year late but you can use sorghum flour it's very similar to wheat flour and has no gluten. Just replace the wheat flour with it. Maybe add some xanthan gum or psyllium huk as a gluten replacement. You can buy whole sorghum and grind it up in a coffee grinder or a blender.
