I saw that someone posted this as an idea for a main topic in the forum, but that does not seem to have panned out, so I decided to start up a thread.
Here is a very simple and delicious recipe!
Cayenne Pepper Rubbed Chicken with Avocado (Warning, this is spicy!)

Ingredients:
4 Chicken Breasts
4 Tb Cayenne Pepper (Substitute paprika to make it less intense!)
Salt and Pepper to Taste
Avocado Chopped into Chunks
Green Onions
Bell Peppers
Lemon Juice (Fresh is best!)
1) Mix together the cayenne pepper, salt, and black pepper in a small bowl. Rub all over the chicken breasts. (I squeezed fresh lemon juice on the chicken breasts first, but you can do it however you like.)
2) Pour some oil in a medium skillet and cook the chicken breasts thoroughly. (About 8-10 minutes on each side, until rub has browned.)
3) In a medium bowl mix together the chopped onion and bell peppers while the chicken is cooking. Mix in the lemon juice coating the vegetables entirely.
4) When chicken is done cooking, mix the avocado into the lemon/vegetable mixture.
5) Serve the mixture over the chicken breasts and enjoy.
Super simple and very good with a mexican rice dish and/or beans on the side.
